Charbay Vodka is Marko's brainchild, starting in 1997 when he came up with the idea of using real fruit to flavor vodka. There were only two flavored vodkas on the market at that time, and Charbay was an instant hit. Starting with Meyer Lemon Vodka in 1998, other fresh fruit and flavors have followed. Once a year, when the fruit is ripe (truly seasonal), Charbay brings in tons of fruit and shreds it, skins and all. It takes weeks to extract the flavor and color, which is then integrated into Charbay's award winning Clear Vodka. The result is fresh, vibrant flavor - as if you are biting into the whole fruit.

The art of making vodka is preserving the mouth-feel of what's being distilled. Our vodka is distilled one time, from Midwest grain. There is no need for charcoal filtration, so we don't do it. Using fantastic northern California water completes the process of giving you a very smooth, well rounded and clean, vodka experience.

Clear Martini

3 oz. Charbay Clear Vodka.

Pour vodka over ice into shaker tin. Shake or stir very cold. Strain into chilled cocktail glass. Garnish with blue cheese or pimiento stuffed olives.

Every winter, we select tree-ripened Meyer Lemons from California to shred and extract in our distillery. What you taste is 100% real, freshly picked Meyer Lemon - as if you are biting into the whole fruit.

West Side

• 2 oz. Charbay Meyer Lemon Vodka,
• 1 oz. freshly squeezed lemon juice
• ½ oz. simple syrup
• 3 finger pinch fresh mint leaves
• 1 splash club soda.

Put the vodka, juice, syrup, and mint in a mixing glass. Add large cold ice cubes and shake vigorously. Open the shaker and add the club soda. Use a julep strainer to strain into a chilled cocktail glass.

Every winter, we select tree-ripened Ruby Red Grapefruit from Texas to shred and extract in our distillery. What you taste is 100% real, freshly picked Ruby Red Grapefruit – as if you are biting into the whole fruit.

50/50 Paloma

• 1 oz. Charbay Ruby Red Grapefruit Vodka
• 1 oz. Tequila Tapatío Blanco
• ¼ oz. fresh lime juice
• ½ oz. agave nectar, splash of grapefruit soda.


Fill glass with ice; fill with all ingredients. Pour into shaker and back into glass to mix. Garnish with a grapefruit wheel.

Green Tea Vodka

Every spring, we select hundreds of pounds of first growth tea to extract in our distillery. What you taste is pure green tea. We like to drink it with lemonade.

• 4 oz. fresh lemonade

Fill glass with ice; fill with vodka and lemonade. Pour into shaker and back into glass to mix. Garnish with a mint sprig or lemon wedge.

Blood Orange-Meyer Lemon Drop

Enjoy this simple and delicious cocktail on the deck at Auberge du Soleil or try your hand at home. Created by Marie Hummer, Auberge du Soleil.

• 1.5 oz. Charbay Blood Orange Flavored Vodka
• 2 oz. Fresh Meyer Lemon Juice
• 1 splash Simple Syrup
• 2 oz. Fresh Blood Orange Juice

Shake and Strain above ingredients over rocks. Top with juice of half a blood orange (2 oz). Garnish with Blood Orange Wheel.
